The Waterford Distillery is located in the city of Waterford, Ireland . The project was initiated by Mark Reynier , the man behind the revival of Islay Bruichladdich Single Malt Whisky, inspired by the world's greatest winemakers. The distillery is a facility originally built by Diageo in 2004 and converted to a distillery in 2015. The production of terroir whiskeys gives importance to where the barley comes from, where and how it is grown. Mark Reynier works with 86 Irish farms growing barley on 19 different soils , including organic and biodynamic barley. With a highly elaborate digital logistics system, each farmer's harvest is harvested, stored, malted and distilled separately.
The Argot cuvée is inspired by Bordeaux wines. Argot represents the "Second Wine" of the distillery with less aging in oak barrels. The whiskey consists of 14 Single Farm Origins, each distilled in exactly the same way. It is made from several varieties of barley: Irina (35%), Olympus (21%), Laureate (14%), Taberna (11.5%), Propino (11.5%) and Overture (7%). ). Maturation lasted 3 years, 1 month and 8 days. The whiskey matures in a combination of 37% first fill American oak casks (from Jack Daniels, Makers Mark, Barton 1792, Jim Beam, Heaven Hill and Four Roses), 23% natural sweet wine casks (from Rivesaltes, Port, Amarone, Sauternes and Marsala), 21% French oak barrels that have contained Bordeaux wine (Château Palmer, Château Lafite Rothschild, Château Léoville, Château Margaux and Château Mouton Rothschild) and 19% American virgin oak barrels ( Kelvin Cooperage, Speyside, Jim Beam and Seagrams). The barrels were assembled on July 7, 2022, bottling took place in February 2023.
