Pacaud Vignerons - Saint Véran - Terroirs of Chasselas 2021
Pacaud Vignerons is a wine estate located in Chassela s, between Mâconnais and Beaujolais. The Pacaud family has been running the vineyard for 3 generations, but the entire production was sold as grape juice until 2014, when Julien decided to vinify his first vintage. In 2021, he is joined by his brother Sébastien, a nature enthusiast who studied biology. Although they do not have the same professional profiles, their respective skills and experience make them perfectly complementary, with a similar culture and approach to vines and wine. The 13-hectare vineyard is divided into the communes of Chasselas, Leynes, Fuissé, Loché, Chaintré and also Saint-Amour in Beaujolais. The estate is certified in organic farming , and a biodynamic labeling process has been initiated.
The Saint-Véran Terroirs de Chasselas is made from Chardonnay whose vine age varies between 15 and 40 years, grown in the village of Chasselas in the form of a theater around the village. After the manual harvest, the harvest is directly pressed in whole bunches. The wine is aged for 10 months on fine lees ; in concrete and stainless steel vats (75%) and in 500 liter barrels for four to six wines.
