AYALA - Major Brut
Ayala is a Champagne House located in the Montagne de Reims in Champagne . It was founded in 1860 by Edmond de Ayala and is today owned by the company Ayala et Co, itself a subsidiary of the Champagne Bollinger company since 2005. In 1865, he became a pioneer in the introduction of a style driest Champagne and produced for the first time “dry champagne”, containing 21 g/L of residual sugar while the traditional dosage at the time was more than 150 g/L. Hadrien Mouflard was appointed Managing Director in 2012, with the mission of accelerating the development of Champagne Ayala. The style of the wines asserts itself around the pure expression of Chardonnay, the unique diversity of the vintages, the tailor-made blend, the reserve wines and the low dosage. The House works a vineyard of around twenty hectares located on the Côte des Blancs, the Montagne de Reims and the Marne Valley.
Ayala Brut Majeur is a blend of Chardonnay (55%), Pinot Noir (30%) and Meunier (15%) from 70 vintages and four different vintages (2016, 2017, 2018, 2019 and 2020). The reserve wine represents 43% of the final blend. Micro-vinification is carried out in 120 individual stainless steel vats : each contains a vintage, a grape variety, a year. Aging on slats lasts 3 years on lees on average. It is bottled with a Brut dosage of 6 g/L .
