Mouton Stellar - Blend - Le Vin Vogueur 2021
Le Vin Vogueur is a project created by Arthur Fèvre . He developed his interest in natural wine after 10 years as a pastry chef in starred restaurants. In 2021, he goes to meet winegrowers on different terroirs and makes wine. He produced his first vintage in Chile, then returned to Dorgogne to vinify at Domaine de l'Astré. In 2022, he continues the adventure in the Pyrenees.
In 2021, Arthur Fèvre and Alexandre Morin left to make wine in Chile , in the Caliboro vineyard, located in the Maule Valley. This region benefits from the influence of the Pacific to the west and the Andes to the east. The soils are composed of pink granite and decomposed limestone. This vineyard is certified in organic farming with biodynamic practices. The wines are vinified without the use of native yeasts and without added sulfur .
Mouton Stellar is a blend of Païs whose vine age is approximately 100 years (40%), and Cariñena (30%) and Grenache Noir (30%) whose vine age is approximately 60 years old and overgrafted on old Païs. After destemming, vinification is carried out in oak barrels with punching down and pumping over. The wine is aged for 19 months in 7-year-old French oak barrels .
