Domaine Pattes Loup - Chablis 1er Cru Butteaux - Late release 2019
Domaine Pattes Loup is located in Courgis , in the Chablis region of Burgundy . Thomas Pico discovered a passion for viticulture very early on, growing up surrounded by a winegrower father and grandfather. He studied viticulture and oenology in Beaune then returned to the family estate of Bois d'Yver in 2004. A year later, in 2005, Thomas took over 8 hectares of vines from the family estate and also began to plant his own vines in the place called “Pattes Loup” , hence the name of the Domaine.
The first vintage under Domaine Pattes Loup was bottled in 2006. Today, Thomas farms 25 hectares of vines organically in the village of Courgis. The Domaine was certified in organic farming in 2009. Thomas works a meticulous approach, focused on respect for nature in the vineyard, with a thoughtful winemaking style, unique to Chablis.
The Butteaux Premier Cru climate benefits from mild weather conditions: with slopes facing south and east and good ventilation, it offers the grapes a preferred terroir for good maturity. The wine is fermented and aged in a mixture of second-use oak barrels for 12 months, and concrete tanks for 12 months as well. Les Butteaux is aged for a long period on lees , then undergoes a long and slow aging of 12 months in bottle .
