Derrumbes is a company specializing in the production of mezcal , located in Mexico . Each bottling represents a mezcal producing region and highlights the traditions, terroir and style of the region where it is made. The regions present a variety of soils and climates thus favoring the cultivation of different species of agave and the adoption of various production techniques.
Oaxaca No.1 is a mezcal produced in Oaxaca , Santiago Matatlán region. The Espadín and Tobala varieties of agaves are harvested and then cooked in a buried stone and black oak oven. Extraction is done using a tahona: a large stone millstone used to crush roasted agave hearts called piñas. Fermentation takes place in wooden vats with fibers and pulque (mezcal “wine”) as leaven. The distillation takes place in a copper still and then the maturation lasts a minimum of 60 days under glass.
