Innocent Bystander - Pinot Noir 2020
Innocent Bystander Wines is located in the Yarra Valley , Australia . Phil Sexton founded the winery in 2004 after being a brewer at Little Creatures Brewing Company, then a winemaker in Margaret River and the Yarra Valley with Giant Steps. He has dedicated himself to two flagship grape varieties: Chardonnay and Pinot Noir, and has created a place for sharing, including a restaurant and a bar described as “your home away from home”. In 2016, he sold the estate to Brown Brothers to focus solely on the Giant Steps project.
The Pinot Noir comes exclusively from the Yarra Valley and is harvested manually. The harvest is put into cold pre-fermentation maceration for 2 to 4 days, then vinification is carried out with 10% whole bunches. Fermentation begins with native yeasts. The wine is aged for 6 months in French oak barrels , 10% of which are new.
