Ziraldo Estate Winery - Ice Wine - Vidal 2019
Ziraldo Estate Winery is located in Niagara Peninsula , Canada . The winery was founded by Donald J.P. Ziraldo , often cited as one of the most important figures in Canadian wine history. In 1974, Ziraldo and Karl Kaiser, a Austrian-born winemaker who had immigrated to Canada a few years earlier, decided to start their own winery after tasting "undrinkable" Ontario wines. Over the next 30 years, they established Inniskillin and promoted the wines Canadians, who were virtually unknown at the time. In 2006, after the sale of Inniskillin to Constellation Brands, Ziraldo launched his own brand under the name “Ziraldo Estate Winery”.
The unique climate of the Niagara Peninsula provides ideal conditions for grapes to ripen: cold winters naturally freeze the water in the berries. Grapes must be harvested at -8°C or colder. Freezing concentrates the sugar in grapes. Since the sugar content in the must is very high, fermentation often stops naturally at around 9-11%, leaving around 200-250 g/L of residual sugar.
