The famous Caroni Distillery was founded in 1918 in the state of Trinidad & Tobago . This state distillery then had its own sugar factory in order to ensure its supply of raw material, high quality sugar cane produced on site. Heavily equipped with different types of stills (column and repasse), this legendary distillery has long remained secret and mystical. Indeed, few of their rums have been bottled under their own label. Their spirits have a very unique aromatic profile with fragrances of hydrocarbons, sweet spices and honey. However, the government decided to close the distillery in 2002 following a crisis in the sugar industry. As a result, their rarity has greatly raw, taking these rums with such an atypical character to a mythical dimension.
Paradise #7 is the first edition of one of the 23 casks selected as the best by The Tasting Gang , on April 12, 2019, among the last 136 Caroni casks. After the tasting, each chosen cask was decanted into 2 demijohns of 54 liters that were stored at the Caroni Paradise in Cognac. Cask #6134 comes from the stock that, after distillation, remained in Guyana until 2009.
