Champagne Drémont-Marroy is located in Charly-sur-Marne, in the Marne Valley in Champagne . The family estate is now managed by Jean-Rémi and Mélanie Drémont . Their great-grandmother, Odette Drémont, was a winegrower and teacher. Their grandparents, Jean-Marie and Geneviève Drémont, were farmers and breeders, and cultivated only 1 hectare of vines. It was under the leadership of their parents, Jean-Louis Drémont and Françoise Marroy, that the vineyard expanded from 1 to 7.5 hectares. The estate extends over 4 villages and includes 23 plots. Jean-Rémi and Mélanie Drémont practice viticulture that is close to and respectful of nature and biodiversity. The vineyard has been certified organic since 2022.
Éclosion Chardonnay is made from Chardonnay from the 2019 vintage. The vinification is carried out in concrete eggs (65%) and in barrels (35%) for 11 months on lees. The champagne is aged on slats for 3 and a half years . It is bottled with an Extra-Brut dosage without the addition of expedition liqueur.
