Chateau Tayac 2021
Château Tayac is located in Margaux , in the Bordeaux wine region. The estate has been in the Portet family for 4 generations. The vineyards cover 37 hectares and the viticultural practices follow the Cousinié method : a program that encourages observation in the vineyard and dialogue with other winemakers. It focuses on soil balance and strengthening the vine's natural defenses. Leaf thinning and green harvesting help control yields.
Château Tayac is a blend dominated by Cabernet Sauvignon , supplemented by Merlot and Petit Verdot . The grapes are put into cold pre-fermentation maceration to promote extraction. The vatting lasts from 26 to 31 days in stainless steel and cement vats. The wine is aged for 10 to 12 months in French oak barrels, 35% of which are new.
