Champagne Billecart Salmon - Cuvée Louis Salmon - Blanc de Blancs 2012
Maison Billecart-Salmon is located in the village of Mareuil-sur-Aÿ, in Champagne . It was founded in 1818 after the marriage of Nicolas François Billecart and Elisabeth Salmon, and the property is now managed by the 7th generation with Mathieu Roland-Billecart . The vineyard stretches from the Côte des Blancs to the Montagne de Reims over 100 hectares and they source their grapes from a total area of 300 hectares in 40 crus of Champagne. The winery is concentrated mainly on small temperature-controlled 47 hectoliter vats which allow for traceability of grape varieties and plots . This cru-by-cru and grape variety-by-grape variety vinification allows for the preservation of all the nuances of the terroir's expression. Maison Billecart-Salmon practices cultivation methods aimed at preserving the environment and promoting biodiversity .
The Louis Salmon cuvée was created in homage to Louis, the brother of Eliabeth Salmon, the co-founder of the House. It is made from Chardonnay exclusively from Grands Crus of the Côte des Blancs and the 2012 vintage: Cramant (58%), Chouilly (21%) and Mesnil-sur-Oger (21%). The wines are vinified in stainless steel vats with partial malolactic conversion. The wine is aged on slats for 144 months . It is bottled with a dosage of 3.75 g/L .
