Don Papa - Single Island Rum - 40%
Don Papa is a brand of rum from the Philippines . The name Don Papa rum refers to a Filipino revolutionary named Dionisio Magbuelas, nicknamed Papa Isio. This sugar plantation foreman, also a healer, participated in the revolution against the Spanish colonists. The Don Papa brand belongs to the Bleeding Heart Rum Company, born in 2012 and the rum is distilled at the Bago Distillery , in operation since 1902. Stephen Carroll , its creator, is a former executive of Diageo, Seagram, and then Rémy Cointreau. The rum is produced from sugarcane from the island of Negros Occidental, known as "sugarlandia", in copper column stills. The molasses comes from one of the 11 mills on the island which dates back to the 1920s and is entirely self-sufficient in electricity, as its boiler is fueled by bagasse from the cane. The plantations are located at the foot of the Kanlaon Volcano, a fertile ground for the development of noble sugar cane. While the classic Don Papa is a rum with added vanilla liqueur, the special editions are drier, unfiltered versions aimed at more experienced connoisseurs.
Don Papa Single Island is an aged molasses rum aged in American oak and Spanish Rioja oak barrels. This version is less sweet than the Small Batch version.
