Domaine Chappaz is located in the town of Fully, in Valais, Switzerland. The estate has belonged to Marie-Thérèse Chappaz since 1987. She had intended for midwifery studies but after an internship at the hospital where she neither appreciated the atmosphere nor the hierarchical system, she decided to accept the Esserts vineyard located in Charrat that his father wanted to give her. Marie-Thérèse discovered the profession of winegrower thanks to the winegrower who was already in charge of the plot. She completed a year-long wine-growing internship at the Biollaz winery and then successfully completed the higher education course in viticulture and oenology. In 1987, Marie-Thérèse took over the family vines. That year, she had to sell the grapes because the cellar (at a place called La Liaudisaz) was not yet ready: 1988 was the year of her first vintage. At the time, she had only a hectare and a half of vines and over the years, it extended to 10 hectares, spread over four villages. In 1997, during a visit to a specialist in biodynamics at the Domaine Chapoutier in Tain-L'Hermitage, Marie-Thérèse decided to convert her domain to biodynamics, an approach in line with her philosophy of respect for the environment, for life and terroir. Her vineyard has been certified by Demeter since 2003. Vinification takes place as naturally as possible, respecting the stages and the evolution of the wine, with indigenous yeasts and a minimum of inputs.
Président Troillet is a tribute to the great-uncle of Marie-Thérèse Chappaz (Maurice Troillet, also President of the Council of Valais) who built the house of the estate in the 1940s. This cuvée is made from Fendant (also known asChasselas) whose average age is 40 years. After a gentle vinification in tank and the malolactic fermentation completed, the wine is aged on its lees, in stainless steels, for 10 months.
