TERROIR:
Sandy-clay soil, very stony, located on the south-eastern coast of the Massif de la Clape.
GRAPES: 70% Mourvèdre 20% Grenache 10% Syrah
VINIFICATION:
Manual harvest with sorting grain by grain, picking at optimum maturity. Total scraping. Long vatting (60 days) in a conical trunk.
BREEDING :
Aging in demi-muid for 20 months. Malo-lactic fermentation in demi-muid.
TASTING:
Intense ruby red color. The nose combines aromas of kirsch, mocha cocoa, sweet spices. In the mouth this wine is rich, dense with silky tannins.
reveals extraordinary persistence. These notes of ripe fruit and its roasted finish suggests a great aging potential in this very powerful and racy wine.
Ideal companion for a piglet on the spit. Decant before serving.
To drink between 6 and 10 years old.
