ETTER - Birne Williams - Pear liqueur

Today, pear trees of the Williams Christ variety exist all over the world. If all can provide us perfect table pears, it is the fruits of those of Valais that are best for distillation.

We have a preference for small pears on the right bank of the sunny Valais Rhone: for years we have been sourcing from the same producers. They guarantee us the excellent quality but not the quantity we need! We pay more to buy the fresh and ripe pears, the quality "yellow", that is to say, arrived at full maturity. These pears are much riper than those available in delicatessen. Also, our Williams Pear develops an incredibly racy and fresh aroma of Williams pear. Every day, immediately after picking, fruits are sent from the Valais to our home in Zug. Then, it is necessary to adapt this excellent aroma. During quenching the pears are sorted and controlled on a treadmill. The fruits that go into fermentation are bursting with aroma - moreover, the many visitors present at this stage of production are crazy about these Williams pears ripened when they have the opportunity to eat one! Come and see us at harvest time in early September: we will be happy to offer you one of these divine pears - a real treat!

After eight to ten weeks of fermentation - the natural transformation of sugar into alcohol - in temperature-controlled containers, distillation begins. Thanks to our long experience and our sensitivity, we extract the heart. For several months, we let the best of the good rest, until the different flavors are harmoniously linked.
