The lower yields of these old vines allow to obtain concentrated juices that will be macerated cold for 1 week for optimal extraction of its most beautiful aromas. After alcoholic fermentation, the wine will be aged in French oak barrels for a 1-year aging during which the malolactic fermentation will take place naturally at the end of winter.
