LA GRANGE TIPHAINE - Ad Libitum 2019
La Grange Tiphaine is located in the Loire Valley, and produces wines in the appellations of Montlouis-sur-Loire, Touraine and Touraine-Ambroise. The 15-hectare vineyard is an exploitation dating from 1850, then specialised in polyculture (tobacco, cereals ...) and which sees its first vines in the 1970s. The domain was bought in 2002 by Coralie and Damien Delecheneau and they work today together, assisted by two employees: Mathieu and Jean-Rémy. They decided to convert the vineyard to organic farming and obtained biodynamic certification in 2014.
Ad Libitum is a blend of Côt (also known as Malbec), Cabernet Franc and Gamay, which age varies from 15 to 45 years old. The harvest is manual and the grapes are meticulously sorted before being macerated and fermented in concrete tanks, separately, for 15 to 18 days. The different grape varieties are blended and then aged in concrete tanks for 4 months.
