Domaine Romaneaux Destezet - Hervé Souhaut - La Souteronne 2019
Domaine Romaneaux Destezet is located in Ardèche, on the right bank of the Rhône, opposite the Hermitage hill. It was created in 1993 by Hervé Souhaut and has grown over the years by planting new vines and successive buyouts of various plots often planted with old vines (50 to 100 years old). The current surface area of the estate is 5 hectares and Hervé Souhaut also has another activity of grape buying. The grape varieties used are of local origin and representative of the North of the Rhône Valley. Sensitised from the start of his activity by the need to develop wines that are as natural as possible in order to best express the potential of the terroir, Hervé Souhaut moved towards the production of grapes from agriculture that respects the environment. But convinced that it should not stop at this stage, he decided, under the impetus of winegrowers adept at natural winemaking and helped by his training as a biologist, to produce wines without oenological additives.
La Souteronne is a cuvée made from the only Gamay grape variety of old local selection from 60 to 80 years old. During the vinification, the long maceration is carried out at low temperature, without destemming, then the wine is aged onfine lees. Bottling is carried out without filtration with less than 25 mg/L of sulfur.
