Domaine de Brin - Mauzac 2018
Domaine de Brin is located between Albi, Gaillac and Cordes in the AOC Gaillac, on a clay-limestone plateau. The former family property is now managed by Damien Bonnet who is keen to apply organic cultivation and natural winemakingmethods. A majority of typical Gaillac grape varieties with a strong identity, such as Duras, Braucol and Prunelart in red, Mauzac, Loin de l'Oeil and Ondenc in white, are cultivated on the 12 hectares of the estate.
After manual harvest of each grape variety at optimum maturity, fermentation starts naturally without adding yeast. The vinification takes place according to the seasons in vats or barrels depending on the vintage, and without sulfur. The wines are clarified by gravity and the reds are not filtered.
This cuvée is made from Mauzac, cultivated at an altitude of 285 meters. The pressing is direct and in whole bunches. Fermentation is spontaneous with indigenous yeasts. The juice is vinified and aged in ovoid sandstone vats of 1,000 litres.
