Château Combel la Serre - Au Cerisier 2018
Château Combel la Serre is located in the Cahors region of the Lot, in the South-West of France. It was founded in 1998 by Jean-Pierre and Martine Ilbert. Jean-Pierre worked in a cooperative cellar, which he decided to leave to settle on the plot of Combel where they live and which is planted with vines. La Serre is the name of the plot opposite where the farm buildings are located. In the early years, they sold the wine "in bulk" by the hectolitre in order to initiate the investments necessary for the operation: construction of a new cellar, purchase of winery, wine-making equipment, etc. In 2003, when the son, Julien, officially moved in with his parents, they took a turn and decided to sell their bottled wine. Today, the estate covers 23 hectares, cultivated in certified organic farming.
Au Cerisier is made entirely from Côt Noir (Malbec). The grapes come from a single parcel of red clay on a limestone base located at an altitude of 350 meters on the Causse, at a place called "Rassiels". The vinification is traditional and the aging lasts about 14 months in cement vats.
