Château Cazebonne - Galets de Cazebone - Macération 2019
Château Cazebonne is located in the commune of Saint-Pierre de Mons in the Graves, in Bordeaux. The estate spreads over 40 hectares, entirely conducted in organic and biodynamic agriculture certified from the 2020 vintage. The Château was bought in 2016 by Jean-Baptiste Duquesne, entrepreneur and wine lover in collaboration with David Poutays, winemaker at Clos de Mounissens. Together, they decided to replant all of Bordeaux's forgotten historic grape varieties.
The Galets de Cazebonne Maceration plot cuvée is made from Sémillon (79%) and Sauvignon Gris (21%). Half of the manual harvest was destemmed, and the rest placed in whole bunches in two terracotta amphorae. The grapes began to ferment on contact with the berries for 12 days. After pressing, the fermentation ended in barrels of several wines. The aging lasted 9 months, with no added sulfur. This cuvée produced 2,663 bottles.
