Domaine Thiriet - Champs Cervin Vézelay 2019
Maison Thiriet is located opposite the Château de Comblanchien, in Côte-d´Or, in the heart of the Côte-de Nuits, in Burgundy. After years of experience in both production and sales, Canadian-born cellar master Matt Chittick and adopted Burgundian Camille Thiriet have shown prudence and ambition to achieve a long-term dream, that of producing Burgundy wines under their own label. They met while working for Domaine de Bellene. 2016 was Maison Thiriet's first vintage, it was produced in a small 20m2 garage and only four white Burgundy barrels and three Côte de Nuits Villages barrels were produced. Everything is done in an artisanal way, pumping over in the bucket, crushing by foot, ratchet press. No inputs or indigenous yeasts are added. The bottles are labeled and waxed by hand.
"Champs Cervin" is made from Chardonnay, coming from a plot located in the commune of Tharoiseau opposite Vézelay. The vines, grown in organic farming, are 25 years old. The alcoholic and malolactic fermentations are carried out in barrels, 20% of which is new. The barrels are then blended in stainless steel vats for a month and a half before bottling.
