Ailsa Bay is a whisky distillery established in 2007 by William Grant & Sons on the site of its Girvan grain-based distillery,in the Lowlands of Scotland. The distillery owes its name to an island located off Girvan. The distillery was built in six months and has been in operation since September 2007. Originally the whisky was only intended to feed the blending industry and not be sold as a Single Malt under its own label.
Ailsa bay is the first whisky to have an analysed measurement of sweetness identified. This is possible through a revolutionary process defined by master blender Brian Kinsman. The whisky is defined as having 019 sppm within it, which gives it the perfect balance between the peat and sweetness. Ailsa bay contains 22 ppm, which is assessed prior to bottling guaranteeing a more accurate measurement. It is also the only Scottish whisky to undergo a process called ‘Micro Maturation’. The distillery’s new make spirit is first filled into Hudson Baby Bourbon casks that are between 25 and 100 litres in size, for 6 to 9 months. The relatively small casks enable intense rapid maturation. The liquid is then transferred into virgin, first-fill and refill american oak casks for several years.
