DALRYMPLE - Cave Block Chardonnay 2016
Dalrymple Vineyards is located in the region of Pipers River, in Tasmania. It was established by Bertel and Anne Sundstrup in 1987, travelling to France for inspiration and guidance. The winemaking is operated by Peter Caldwell, who graduated from Roseworthy Agricultural College in South Australia, and served his apprenticeship in Burgundy, Bordeaux, California and New-Zealand. The vineyard spreads over 11 hectares where Pinot Noir, Chardonnay and Sauvignon Blanc are grown sustainably.
The Cave Block Chardonnay is made from hand-harvested grapes grown on free draining soils and steep slopes, producing low yields of intensely concentrated fruit. The whole bunches are pressed to a mix of new and older French oak barriques. Winemaking included a parcel of wild fermentation, light lees contact and partial malolactic fermentation.
