Waterford Distillery is located in the town of Waterford, in Ireland. The project was initiated by Mark Reynier, the man behind the renaissance of Islay’s Bruichladdich Single Malt Whisky, inspired by the world’s greatest winemakers. The distillery is a facility originally built by Diageo in 2004 and converted to distilling in 2015. Producing terroir-laden whiskies, the provenance of the barley, where and how it is cultivated, is key. He has sourced 86 Irish farms, including organic and biodynamically-run, growing barley on 19 distinct soils. With a pioneering digital logistical system, each farmer’s crop is harvested, stored, malted and distilled separately.
Lacken 1.1 comes from Francis Kehoe's farm, and is bottled exclusively for France. The barley was harvested on August 14, 2015 and then distilled between February 10, 2017 and February 18, 2017. The maturation lasted 3 years, 9 months and 20 days. The whisky barrels are assembled on December 18, 2020 before being bottled in March 2021 (34% new barrels of American oak, 21% of French oak barrels, 28% of barrels of American virgin oak, 17% of barrels of natural sweet wine). 12,000 bottles were produced.
