Domaine de l'Ecu - Orthogneiss 2018
Domaine de l'Ecu is located in Landreau, in the Pays Nantais in the Loire. It belongs to Frédéric Niger, of Belgian origin. Domaine de l'Ecu has been certified in organic farming since 1975 and biodynamic since 1998 on all of its 24 hectares. Frédéric and his team have given up all technological artifice in the cellar to "break with the movement towards standardisation of wines and preserve the link uniting each of the cuvées with a terroir and a vintage".
Orthogneiss is made from manually harvested Melon de Bourgogne. The entire harvest is put in pneumatic pressing and fermentation occurs spontaneously with indigenous yeasts. The wine is aged on lees in underground concrete vats.
