Waterford Distillery is located in the town of Waterford, in Ireland. The project was initiated by Mark Reynier, the man behind the renaissance of Islay’s Bruichladdich Single Malt Whisky, inspired by the world’s greatest winemakers. The distillery is a facility originally built by Diageo in 2004 and converted to distilling in 2015. Producing terroir-laden whiskies, the provenance of the barley, where and how it is cultivated, is key. He has sourced 86 Irish farms, including organic and biodynamically-run, growing barley on 19 distinct soils. With a pioneering digital logistical system, each farmer’s crop is harvested, stored, malted and distilled separately.
Lakefield 1.1 is made from Seamus Duggan's barley, grown in his farm named Lakefield. The barley was harvested on September 11, 2016 and then distilled between March 04 and March 12, 2017. The maturation lasted 3 years, 7 months and 28 days. The whisky matures in a combination of 46% first-fill American oak, 23% American Virgin oak barrels, 16% vin doux naturel barrels and 17% Premium French oak barrels. 30,528 bottles were produced.
