WATERFORD - The Cuvée 1.1 - Bottled 2021 - 50%
Waterford Distillery is located in the town of Waterford, in Ireland. The project was initiated by Mark Reynier, the man behind the renaissance of Islay’s Bruichladdich Single Malt Whisky, inspired by the world’s greatest winemakers. The distillery is a facility originally built by Diageo in 2004 and converted to distilling in 2015. Producing terroir-laden whiskies, the provenance of the barley, where and how it is cultivated, is key. He has sourced 86 Irish farms, including organic and biodynamically-run, growing barley on 19 distinct soils. With a pioneering digital logistical system, each farmer’s crop is harvested, stored, malted and distilled separately.
The Cuvée 1.1 is a limited edition of 40,000 bottles that was bottled on the 26th of July 2021. It is a synthesis of the 25 Single Farm Origins that have been bottled since the distillery opened. Consequently, the Cuvée is made from 4 varieties of barley: Irina (36%), Overture (32%), Taberna (19%) and Propino (13%) and 29 different types of barrels.
