Champagne Bruno Paillard - NPU 2008
Champagne Bruno Paillard is located in Reims, in the Champagne region. Bruno Paillard was born in 1953 and is from a lineage of brokers and growers in the two Grands Crus villages of Bouzy and Verzenay. Following in the family’s footsteps, he started working as a broker in 1975, acquiring a deep and extensive knowledge of Champagne. But after six years, he had the desire to create a different Champagne. In January 1981, armed with nothing but his sense of determination, Bruno Paillard sold his old Jaguar, a collector’s item, to start his company. Bruno Paillard started producing his champagnes in a rented cellar using carefully selected grapes from independent growers. In 1994, Bruno Paillard bought his first vineyard: three grand cru hectares in Oger in the Côte des Blancs. From this point on, he patiently began to build up his remarkable vineyard that now covers 32 hectares, including 12 grands crus that provide more than half of all the grapes that the house needs. The remainder are still purchased from the same independent growers, from more than 30 different villages, who have been Paillard’s partners for many years now. In January 2007 his daughter, Alice Paillard, decided to join and now co-manages the Maison with her father. They are commited to sustainable agriculture.
NPU 2008 (“Nec Plus Ultra” meaning “Best of the best”) is made only in truly great vintages and comes from 7 Grands Crus. The first pressing was fermented in small wooden barriques where the wines spent their first 10 months. The wines from only a few selected barrels are then blended (50% Pinot Noir, 50% Chardonnay). The second fermentation takes place immediately after bottling and lasts 10 years on lees, then a further 2 years after disgorgement that occurred in April 2019. It is an Extra Brut with 3 g/L of dosage. 18,798 bottles and 623 magnums have been produced for this vintage.
