Domaine Chantal Lescure - Chambolle Musigny - Les Mombies 2019
Domaine Chantal Lescure is located in the town of Nuits-Saint-Georges, in Burgundy. Founded in 1975 by Chantal Lescure and Xavier Machard de Gramont, the family estate now operates 19 hectares of vines, to the north on the slopes of Dijon and to the south as far as Meursault. Aymeric and Thibault Machard de Gramont, Chantal Lescure's two sons, took over the estate when their mother passed away in 1996. Each year, they produce 19 cuvées from 35 plots. The vineyard has been fully cultivated in certified organic farming since 2006.
Chambolle-Musigny Les Mombies comes from Pinot Noir vines, around 40 years old, planted on an area of 0.25 hectares. After the manual harvest, the grapes are sorted, destemmed, not crushed and vatted by gravity. The vinification takes place in 25 hectoliters conical wooden vats. The vatting lasts 18 to 25 days, the punching down is moderate. Aging takes place in a cold cellar, on lees for 16 to 18 months, with 30 to 50% new barrels.
