Château Dompierre - Le Blanc de Dompierre 2019
Château Dompierre is located in Saint-Laurent-Médoc, near Pauillac in Bordeaux. Michel Aroldi, born in Libourne, has a long farming history. In 1993, he bought Château Plain-Point in Fronsac and established himself as a very talented winemaker. Attracted by an evolution in terms of growth, Michel Aroldi acquires Château Dompierre on the terroir of Pauillac. He attaches great importance to respecting the ecosystem, the terroir and the vintage. Thus, from the vine to the ageing at the winery, he sets up a process of sustainable agriculture, inspired by simple and natural rules.
Blanc de Dompierre is made from Sauvignon Blanc from the purchase of grapes from a family-friend winemaker located in Entre-Deux-Mers. Harvesting and vinification are carried out by the Aroldi family. A third of the harvest is macerated for about 12 hours, and the remaining 2/3 under direct pressing. The wine is aged for 6 months in stainless steel vats.
