Domaine des Cognettes - Clos des Choffardières 2014
Domaine des Cognettes is located in Clisson, in the Muscadet appellation in the Loire Valley. It has been a family estate for 9 generations, now run by the two brothers Stéphane and Vincent Perraud. They develop a variety of Muscadet by the method of aging on lees from a few months to 3 years and more for the Clisson cru, but also white, red and sparkling varieties. The entire vineyard has been cultivated in certified organic farming since 2010. The communal crus of Muscadet are the result of reflection between winegrowers to reveal the identity specific to each terroir. Made from the Melon Blanc grape variety, these wines, respecting rigorous specifications, represent the top of the range in terms of wines from the Nantes vineyard. They offer a complexity and an aptitude for aging allowing them to be partners of choice for haute cuisine.
Clos des Choffardières is made from Melon Blanc from a 1.23-hectare plot on a terroir of granite with two micas, sand and clay mixed with quartz pebbles. The age of the vines varies from 40 to 74 years. The harvest is manual and the pressing is carried out in whole bunches. Settling is natural and fermentation occurs spontaneously with indigenous yeasts in underground glass tanks. The wine undergoes a complete malolactic fermentation. The aging lasts 45 months on the lees, also in underground glass tanks. It can be consumed now and will keep for 15 years or more.
