Mas Mellet and Eric Pfifferling - Les Salines 2021
The Mas Mellet is located in Gallician , in Costières-de-Nîmes in the Gard . The estate was taken over in 2002 by Emilie and Brice Bolognini , when they were in their twenties. They work the 27 hectares of vines that were abandoned in organic farming , certified since 2007.
Les Salines is a cuvée produced in collaboration with Eric Pfifferling , from the Domaine de l'Anglore located in the Rhône Valley, in Tavel . This natural rosé wine is made from Carignan from three different vineyards, on vines planted in 1948, 1963 and 1966 . One hundred boxes of 10 kilos from each clos are harvested manually. The sorting is done on the plot and then in the cellar. The grapes are put in the refrigerator overnight and then placed in vats by gravity. It macerates for another night then is devatting, by gravity, the next day. The pressing and the flow of the juices is done in old barrels over 10 years old. The wine is aged in barrels until the new moon of March.
