Domaine de Montcalmès Blanc is a blend of Roussanne (50%) and Marsanne (50%) whose vines are around 20 years old. The harvest is de-stemmed and crushed then put into direct pressing. After cold settling for 24 to 48 hours, vinification begins spontaneously with indigenous yeasts. Fermentation is carried out in barrels and demi-muids. The wine is aged for 24 months in oak barrels and demi-muids of 1 or 2 wines. The batches are blended 4 to 6 months before bottling, which takes place in Lune Vieille.
