The Lemercier Frères distillery is located in Fougerolles-Saint-Valbert, in Franche-Comté . Before 1800, the Lemercier family was a family of important farmers who settled in Grand-Fahys, a hamlet in the commune of Fougerolles. In addition to their crops, they have many orchards and produce kirsch and plum brandy. Gradually, their production of eau-de-vie largely exceeded their personal and family needs and they became distillers by profession. In 1866, the brothers Isidore and Joseph Lemercier created the distillery to develop and operate their business of wines, kirsch and liqueurs. In 1881, they built a building containing equipment using steam distillation and they embarked on the manufacture and marketing of absinthe liqueurs. The establishment's activity increased with the installation of a rectification column in 1895 near the existing buildings. This additional activity enables Lemercier Frères to produce neutral alcohol which is used in the manufacturing process of several liqueurs, including absinthe.
Pastis 1811 was created in 2017. It is a pastis obtained by maceration and distillation of seeds and plants: absinthe, artemisia, gentian, liquorice, star anise... The recipe respects the original recipe found in the attics of the Lemercier Frères distillery. . The distillates are aged for a minimum of 9 months in carboys before blending.
