Domaine Roulot is located in Meursault, on the Côte de Beaune in Burgundy . Belonging to Jean-Marc Roulot and his sister, Michèle Javouhey Roulot, the estate produces wines but also brandies and fruit liqueurs . The distillation activity began in the middle of the 19th century: the copper still that is used for distillation today belonged to the grandfather and then father of Jean-Marc Roulot, who were then a “traveling distiller”. The tradition of distillation in the Roulot family, originally, was oriented around the marc of Burgundy. Today, the range is made up of two eaux-de-vie and a liqueur. The estate has been certified in organic farming since 2013, with non-certified biodynamic practices.
The apricot liqueur is made from pitted apricots, then macerated in a 96% neutral alcohol. The apricot infusion lasts about 5-6 months. This maceration is then diluted with water to reach 25% alcohol , and sugar is added. Generally, a liqueur has a sugar level of 250 g/L but the Roulot estate initially reduced this quantity to 175 g/L to finally reach 160 g/L today. This balance between the alcohol level and the sugar level is what makes this liqueur famous.
