Gevrey-Chambertin “Vignes Belles” is made from Pinot Noir harvested from 2 plots at a place called “Vignes Belles”. The harvest is destemmed then the grapes are left to macerate for 16 days before fermentation begins spontaneously with indigenous yeasts. During fermentation, pigeages are made for extraction. The aging lasts 16 months for 30% of the wine in new barrels , and the remaining 70% are put in vats for 5 months before being transferred to old barrels of 2 to 3 wines for 11 months . The assembly of the barrels is carried out before bottling.
Grape variety: 100% Pinot Noir
