Baglio di Grìsi is located in Grìsi, in the municipality of Monreale in western Sicily . The winery overlooks the valleys of the Belice and Jato rivers, known since ancient times for their mild climate and rich vegetation. The estate has belonged to the Di Lorenzo family for more than a century. They managed to discover the potential of this land and transform what was a very remote rural area, originally used as pasture and for the cultivation of seeds, into lush vineyards and olive groves, radically transforming the configuration of an entire territory. from an agronomic, economic and social point of view. The Di Lorenzo family has decided to focus with determination on the oldest native grape varieties of Sicily, such as Grillo and Nero d'Avola, extracting all their typicity and quality. Baglio di Grìsi wines are the result of a combination of research, innovation and respect for tradition. They are certified organic and are produced using sustainable techniques and technologies, both in the vineyard and in the cellar.
This wine is made with the indigenous Nero d'Avola grape variety. The bunches are harvested in crates when they have reached full maturity . The destemmed and cooled grapes are transferred to the fermentation tanks where the alcoholic fermentation takes place for 8 to 12 days. Frequent pumping over takes place during fermentation to increase the extraction of flavors and color. The resulting wine is then aged in wood.
