Domaine Hubert Lamy - Saint Aubin 1er Cru - Behind at Edouard High Density 2020
Domaine Hubert Lamy is located in the commune of Saint-Aubin , on the Côte de Beaune in Burgundy . The Lamy family has been working the vineyard since 1640 but the modern Domaine Hubert Lamy was created by Hubert Lamy in 1973. Before creating his own estate, Hubert worked with his father, Jean Lamy. At that time, the estate extended over approximately 8 hectares, mainly planted with regional appellations. Most of the estate's development took place in the 1990s when new vines were purchased or leased. Olivier Lamy , having first studied winemaking and business, joined the family estate in 1995. Before joining his father, he completed internships in several other wine estates and tasted wines from all over the world. With this experience, he was able to bring new ideas and new working methods to the vineyard and the cellar. Today Domaine Hubert Lamy has 18.5 hectares of vines spread over 20 appellations including Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet and Santenay . The terroirs of Domaine Hubert Lamy are mainly made up of limestone. The vineyard is conducted in organic farming, not certified .
The Chardonnay grapes are gently pressed in a pneumatic press, lightly settled, then put into 300-litre barrels or demi-muids (600 litres), aged 1 to 5 years, where the grape juice will ferment. A controlled temperature in barrels and a cold cellar favor a long alcoholic fermentation, up to 90 days. The wines are lightly stirred in order to obtain suspension of the lees . The malolactic fermentation takes place in barrels then the wines are racked in August, fined with casein and lightly filtered with Kieselgur. The doses of sulfur dioxide are provided according to the analyses. Bottling takes place after 12 to 18 months of ageing .
The Saint-Aubin 1 er Cru Derrière Chez Édouard Haute Densité is made from Chardonnay planted in 2000. According to writings from the Middle Ages, until the appearance of phylloxera in the 19th century, the vine was cultivated at high density. (about 30,000 vines per hectare). This high density was the result of the observations and experiences of our ancestors who had seen beneficial competition for the root system, the quality of the grapes and the wine.
