Domain of size to wolves - Jacky Blot - Romulus 2020
The Domaine de La Taille aux Loups is located in Montlouis-sur-Loire , in the Loire Valley . It has existed since 1988, then under the management of a Bordelais who rented out 7 hectares of vines belonging to André Chapeau and Clément Germain. In 1990, the wine broker Jacky Blot takes care of the vinification of the vintage and over the years, becomes attached to the Domaine. Thus in 1992, he became the owner. In collaboration with Christophe Mesliand , they quickly forged a fine reputation. Jacky Blot attaches importance to respecting nature and the grape: no pesticides, herbicides or chemical fertilizers. The estate has been certified in organic farming since 2012. The choice of traditional plowing and manual harvesting is highlighted, as soon as the grapes reach perfect maturity. He avoids interventions in the cellar and prefers traditional breeding, without rushing the stages. Jacky Blot also owns the Domaine de la Butte in Bourgueil.
Romulus is made from botrytised Chenin Blanc , the age of the vines being 70 to 80 years. The manual harvest is done with care to select only the berries in the best sanitary condition. After soft pressing, fermentation occurs naturally with natural yeasts. The wine is aged for 1 year on fine lees , in oak barrels about 5 years old, 10% of which are new.
Grape variety: 100% Chenin Blanc
