Innocent Bystander - Chardonnay 2021
Innocent Bystander Wines is located in the Yarra Valley , Australia . Phil Sexton founded the estate in 2004 after having been a brewer at the Little Creatures Brewing Company, then a winemaker in Margaret River and the Yarra Valley with Giant Steps. He has devoted himself to two flagship grape varieties: Chardonnay and Pinot Noir, and has created a place of sharing with, in particular, a restaurant and a bar described as "your home away from home". In 2016, he sold the estate to Brown Brothers to focus solely on the Giant Steps project.
Chardonnay is mechanically harvested selectively. The harvest is put into direct pressing and then fermentation begins with indigenous yeasts, partially in oak barrels. Malolactic fermentation is not desired in order to preserve freshness and acidity. The wine is aged for 9 months on the lees, in oak barrels .
