The Adventure - Optimus 2019
The Adventure (or Stephan Vineyards) is located in Paso Robles , California . The estate was founded in 1998 by French winemaker Stephan Asseo , who settled in Paso Robles due to its similarities in terroir to the Rhone Valley. L'Aventure has 51 hectares planted with Syrah, Grenache, Mourvèdre, Cabernet Sauvignon, Petit Verdot, Roussanne, Viognier and Grenache Blanc in southwest Paso Robles. The vineyards benefit from the cooling effects of the nearby Templeton Gap which allows Pacific breezes to flow through the mountains. These breezes mean the vineyards experience dramatic temperature drops at night, helping the fruit retain its acidity as it ripens.
Optimus 2019 is a blend of Syrah (57%), Cabernet Sauvignon (31%) and Petit Verdot (12%) . The wine is aged for 14 months in new French oak barrels (89%) and in 1-year-old French oak barrels (11%).
