Domaine François Chidaine - Montlouis sur Loire - Brut Tradition 2020
Domaine François Chidaine is located in Montlouis-sur-Loire , in the Loire Valley. The vineyard covers 37 hectares; 20 hectares of Montlouis and 10 hectares of Vouvray . The vines are divided into around fifty plots which have been organically grown since 1992 and certified biodynamic since 1999. The remaining 7 hectares produce wines under the Touraine appellation. Looking to the future, François Chidaine began an adventure in Murcia, a province in southern Spain in 2010, where he produces a white wine and a red wine made from local grape varieties.
The Brut Tradition is made from Chenin Blanc from plots in Montlouis-sur-Loire, grown on clay soils and coarse flint elements, with a subsoil made up of Tuffeau. After pressing in a pneumatic press, the alcoholic fermentation is carried out by indigenous yeasts in 620-litre demi-muids. It can last up to 6 months. Malolactic fermentation is not sought. The prize de mousse takes place in the cellars of the estate, and the bottles remain on laths for at least 12 months . It is bottled with a Brut dosage.
