Mas Mellet and Eric Pfifferling - Fleur des Salines - White 2022
The Mas Mellet is located in Gallician , in Costières-de-Nîmes in the Gard . The estate was taken over in 2002 by Emilie and Brice Bolognini , when they were in their twenties. They work the 27 hectares of vines that were abandoned in organic farming , certified since 2007.
The flower of a salt pan is the top layer of salt harvested by hand, which is rare. The Fleurs des Salines cuvée is produced in collaboration with Eric Pfifferling , from the Domaine de l'Anglore located in the Rhône Valley, in Tavel . It is made from Vermentino harvested and sorted manually at aromatic maturity. The grapes are pressed directly and vinification and then aging take place in 220-litre sandstone eggs . Vinification is carried out without adding sulphur.
