The Cazottes Distillery is located in Villeneuve-sur-Vère in Tarn . Laurent Cazottes , heir to the know-how of a traveling distiller, cultivates his fruits and flowers in organic farming , using biodynamic practices. He has around 600 Williams variety pear trees, 200 Reine Claude Dorée plum trees, and vines since 2010. He produces brandies, liqueurs as well as aperitifs and wine.
Sloe liqueur is made from sloes dried on racks until the end of December. The berries are burst manually one by one, then the sweet maceration lasts 6 months. After pressing, distillation makes it possible to extract brandy from young sloe marc, which is then reincorporated into the liqueur.
