Domaine de Courcel - Pommard 1er Cru Les Croix Noires 2019
Domaine de Courcel is located in the commune of Pommard in Côte de Beaune , Burgundy . The estate has four Premier Cru climats planted exclusively with Pinot Noir: Le Grand Clos des Epenots, Les Rugiens, Les Frémiers and Les Croix Noires . The Domaine de Courcel has belonged to the Courcel family since the 17th century. Today, the estate's 10.5 hectares of vines are under the responsibility of Anne Bommelaer and Marie de Courcel . All cultivation techniques fall under non-certified organic farming for strict respect for the terroirs and the environment.
Les Croix Noires (0.58 hectares) is located below Les Rugiens, and adjoins Les Frémiers to the north. The Domaine owns more than half of the total surface area of the place. The plot is around forty years old and oriented east-west.
Vinification takes place over a month. After careful sorting, the whole bunches are placed in the vats. Cold maceration, followed by fermentation at low temperature, allows the aromas to be better extracted. Frequent punching down and pumping over are carried out. A post-fermentation carbonic maceration is then carried out. Aging takes place in carefully selected oak barrels, the stock of which is renewed by a third each year. After extensive extraction of approximately one month, the wines are aged for a period of 21 to 23 months .
