Château de Côme is located in the Saint-Estèphe appellation, in Bordeaux . When Baron Velge bought Château de Côme from the family of the same name in 1997, only two hectares remained, the vineyard having been leased by another château. Very quickly, the surface area of the vineyard increased to seven hectares and today, management has opted for organic vineyard management , with certification due to take place soon.
Château de Côme 2014 is a blend of equal parts Cabernet Sauvignon and Merlot with an average age of 45 years. After manual harvesting, the harvest undergoes a cold pre-fermentation maceration then is transferred to temperature-controlled cement vats. The vatting lasts 21 days then the aging is carried out in barrels for 12 to 14 months , with 30% new barrels and the rest in one and two wine barrels .
