The Wild Children - Ché Chauvio 2022
Domaine Les Enfants Sauvages is located in the Côtes Catalanes appellation area in Roussillon . Carolin and Nikolaus Bantlin , originally from Germany, settled in a sheepfold with 7.5 hectares of vines in 1998. In 2003, Carolin did an internship with Olivier Pithon. The couple then decided to start producing their own wines. The grapes are grown without the use of synthetic chemicals, with remedies rather limited to plants like chamomile and nettle. The terroir is rich in limestone, surrounded by olive, almond and fig trees, as well as scrubland vegetation, most often thyme and rosemary, which thrives on the limestone slopes of the Mediterranean coast.
Ché Chauvio is a blend of Syrah (40%), Cinsault (40%) and Mourvèdre (20%) . The Syrah and part of the Mourvèdre are put into direct pressing. Subsequently, the whole Cinsault clusters are macerated in the juice of the fermenting Syrah for approximately 3 days. All of the wine is then racked off and the marc is pressed. They are reassembled and complete their alcoholic fermentation together.
