Mas Mellet - La Soif des Salines - Rosé 2023
Mas Mellet is located in Gallician , in Costières-de-Nîmes in the Gard . The estate was taken over in 2002 by Emilie and Brice Bolognini , when they were in their twenties. They work the 27 hectares of vines which were abandoned in organic farming , certified since 2007.
La Soif des Salines is a cuvée produced in collaboration with Eric Pfifferling , from Domaine de l'Anglore located in the Rhône valley, in Tavel . It is a blend of Bourboulenc (50%) and Aramon (50%) . After manual harvesting, sorting is carried out in the plot then in the cellar. The grapes are put in the refrigerator overnight then placed in vats by gravity. It macerates for 4 days then is devatted by gravity. The pressing and the flow of the juices are done in concrete vats. The wine is aged in concrete vats.
